As the temperatures drop, my need for comfort food rises. I find myself craving savory treats that only warm, cheesy goodness can fulfill. Right on cue with this seasonal urge, Darigold launched a new line of cheese and reached out to us to give it a try. An exceptionally creamy and delicious white cheddar, this yummy cheese is perfectly suited for my favorite comfort food recipes — like this sunny white cheddar and prosciutto pie served with a white cheddar dipping sauce!

I love to have easy recipes I know I can prepare quickly for a last minute dinner solution or when I have some friends over. This straightforward dish doesn’t require many ingredients and can easily be prepared within 20 minutes, aka the perfect solution for last-minute holiday guests! In addition to being delicious, it is also super cute (Just look at it!) and will definitely add some ‘wow’ factor to your meal.

Ingredients 

For the sunny pie:

  • 2 rolls store bought puff pastry
  • 8 slices prosciutto (about 100 g / 3.5 oz)
  • 1 cup shredded Darigold medium white cheddar
  • pinch of oregano
  • 1 egg yolk

For the white cheddar dipping sauce:

  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • ¾ cups milk
  • 2 cups of shredded Darigold sharp white cheddar

Directions

Lay two rolls of puff pastry flat and cut them into circles (approx. 9.5 inches). Place the first circle on a baking tray lined with parchment paper.

Spread the prosciutto slices on the puff pastry avoiding the edge.

Sprinkle with shredded medium white cheddar and a pinch of oregano. Brush the naked edge with water and place the other puff pastry circle on top and press them well together. Make sure to press the two edges with your finger tips so that they are sealed. Using a glass, make a circle in the middle.

Using a pair of scissors, cut into the pie to create the rays. First into four, then cut each quarter into two and then each eighth into two again. You will end up with sixteen rays.

Gently twist the rays using this method: Put your finger on the ray near the center (delicate spot where it can be easily ripped), then with the other hand, twist and give it about four turns. Repeat with each ray. Brush the pie with an egg yolk slightly diluted with a few drops of water.

Bake at 355⁰F for 25 to 30 minutes until golden and crispy.

While the pie is slightly cooling off, prepare the cheddar dipping sauce. Start by melting the butter in a medium saucepan and stir in the flour. Add the milk and whisk for a few minutes until it thickens slightly. Remove from heat and stir in the cheese until melted. Eat right away by dipping the delicious rays of your sunny pie!
