Happy Monday! I want to kick off the week with a healthy, fast, and easy breakfast power bowl that will truly jumpstart your morning. As I’ve gotten older (ahem), I’ve noticed that I tend to wake up earlier and earlier. I did some soul-searching and came to the realization that I do my best work earlier in the day and am basically burnt out by 3 pm. So I started experimenting and structured my day accordingly. Each day is now front-loaded: I work out in the morning, then dig into work so I can take a break at 3 pm. Then I start back up with work around 7. So far it’s been working!

Here’s the thing though: when you’re up by 7 every day, you need a breakfast that will start you off on the right foot. That’s why I asked Emma to come up with a recipe that’s not only healthy, but will keep me satiated and powered for the day ahead. Enter the protein-packed yogurt power bowl.

While I love to make things from scratch… I don’t always have the time. This power bowl uses lots of staples that I readily have on hand: yogurt, granola, chia seeds, dried fruits, and fresh fruits. Really, it’s all about using up whatever I’ve got in the pantry and fridge.

Ingredients

  • 1 Cup plain organic greek yogurt (Wallaby makes some yummy ones)
  • 1 Tablespoon raspberry jam (strawberry or cherry would be excellent, too!)
  • 1/2 Cup dark chocolate coconut granola (here’s a good store-brand one or try this homemade version)
  • 1 Tablespoon hemp seeds
  • 1 Tablespoon fresh mint, roughly chopped

Plus, more add-ins like (aka whatever you have on hand):

  • chopped walnuts, pecans, or almonds
  • chia seeds
  • pumpkin seeds
  • honey
  • bee pollen
  • cacao nibs
  • natural peanut or almond butter
  • chopped bananas
  • chopped dates
  • dried cranberries, blueberries, or cherries

Directions

To create your perfect bowl, add your yogurt in first, then swirl in your liquids (I just use jam, but if you’re feeling frisky and want to add in honey or almond butter, do so at this step). Pour your granola over the swirled yogurt, followed by the hemp seeds, chopped mint, and finally your additional add-ins. Dig in for a great EASY start to your day!
