Summer, can you just never end? Lately, it sort of feels like I’m using these long summer days to relive my wilder days, so when it was time to think up a cocktail for this month I immediately reverted back to my college days and had one idea: jello shots! There’s just something about these jiggly, boozy, brightly colored treats that make me happy (and a bit tipsy). With the help of Claire, we fancied up this old favorite with a delicious margarita jello shots recipe topped with Maldon salt, of course.

Ingredients

  • 1/4 cup jello lime
  • 1/4 cup jello lemon
  • 1 cup water boiling
  • 1/4 cup Grand Marnier
  • 3/4 cup Repasado Tequila
  • 6 limes sliced
  • Maldon salt to taste

Instructions

  • Bring 1 1/2 cups water to a boil on the stove. In a heat-proof bowl, place lime and lemon jello. Once water has boiled, add 1 cup to the jello and whisk well until all the jello is dissolved.
  • Once the jello mixture is cool enough to touch (about 5-7 minutes) add tequila and Grand Marnier. Whisk well to incorporate all ingredients. Pour into desired mold or baking dish, place into fridge, and let jello set for at least 6 hours.
  • Once the jello shots are set, serve with lime wedges and salt.

Notes

Be sure to keep your jello shots refrigerated when not being enjoyed — due to the alcohol and warm weather, the jello could melt quickly if left out!

Happy Margarita Week, friends! I always toast to Kate from Hola Jalapeño because she does such an amazing job organizing all of us and encouraging us to share delicious, unexpected cocktails. I’m a big fan in general of grilled fruits because I love the combo of smokey, charcoal flavor and the sweetness of the fruit. Plus, heating up the fruit always makes their flavors explode even more! For our margarita recipe, we decided to grill some mango and see how it goes… and it is SO DAMN GOOD.
