
Happy Margarita Week, friends! I always toast to Kate from Hola Jalapeño because she does such an amazing job organizing all of us and encouraging us to share delicious, unexpected cocktails. I’m a big fan in general of grilled fruits because I love the combo of smokey, charcoal flavor and the sweetness of the fruit. Plus, heating up the fruit always makes their flavors explode even more! For our margarita recipe, we decided to grill some mango and see how it goes… and it is SO DAMN GOOD.

Does anything make you think of the promise of summer more than sipping a delicious margarita in the sun on your patio? Our backyard is still a giant mess, but I have high hopes that we will finish soon and I’ll be able to enjoy these soon. After weeks and weeks of so many hard work, I’d say we’ve earned a few of these, huh??


Grilled Mango Margarita
Ingredients
- 2 oz silver tequila
- 1 oz triple sec
- 1 oz fresh lime juice
- 1 oz fresh lemon juice
- .5 oz fresh orange juice
- 1 oz simple syrup
- grilled mango puree (strained)
- tajin salt for rim
Instructions
- Heat grill to medium heat. While the grill heats up, cut the skin off the mango and cut into slices about 1″ thick. Add the mango slices to the grill and cook for 5-7 minutes or until they have a nice char on the outside. Remove from heat and allow to cool. Once cooled, place the mango in a blender with a handful of ice cubes and pulse until it forms a purée. Strain into a container to store (or don’t, if you prefer pulp).
- To make the cocktail, combine all ingredients in a shaker with ice. Shake until the outside of the shaker feels frozen. Rim your glass with Tajin. Strain into a fancy margarita glass with ice or up. Cheers!
