– large eggs – butter – olive oil – shallot thinly sliced – spinach – heavy cream or half and half – Gruyere grated – salt and pepper to taste – chives for garnish

Pre-heat oven to 375. In a heavy pan, heat a drizzle of olive oil over medium-low heat. Add shallot and cook, stirring occasionally, until translucent. While this is going on, butter the ramekin.

Using a slotted spoon, move the shallots to the ramekin and set aside. Next, add add in spinach and allow to wilt. Once totally wilted, move to the ramekin.

Next, crack the eggs into the ramekin being careful not to break the yolk. If you want to use more eggs, add them at this step. Pour in a splash of cream, season with a pinch of salt and pepper, then grate the cheese over the top.

Bake for about 12 minutes. Garnish with freshly chopped chives. Serve with a toasted slice of crusty bread and some bacon on the side.
