My Family's Greek Chicken and Potatoes Recipe

My FAVORITE weeknight, easy meal - Greek style!

Ingredients
  

  • 1.5 lbs chicken (I prefer bone in, skin on legs)
  • 1.5 lbs baby potatoes
  • 1/4 cup fresh oregano
  • 1/4 cup fresh thyme
  • 5 garlic cloves minced
  • 2 lemons
  • olive oil
  • salt and pepper to taste
  • feta (optional, but come on!)

Instructions
 

  • Preheat the oven to 375. 
  • Wash the potatoes and rinse the chicken then pat dry. In a shallow pan drizzle some olive oil. Cut the baby potatoes into quarters and add them to the pan. Toss the potatoes in the olive oil. Place chicken thighs on top of  the potatoes and drizzle the skin with more olive oil. Squeeze the juice of one lemon over the entire pan. Coarsely chop the fresh herbs, mince the garlic and sprinkle over the potatoes and chicken. Season with salt and pepper. Slice the second lemon into rounds and place on top of the potatoes. 
  • Roast for approximately 45 minutes, checking the internal temperature of the chicken before removing. Also, you may want to test a potato with a fork to ensure it’s soft enough! Serve with crumbled feta to sprinkle on top.
