Peel and cube 8 apples. In a medium pot, bring spiced cider to a boil. Reduce to a simmer and cook until liquid has reduced by half and has thickened.

Add the apple, butter, and salt to a pot. Cook until the apple just begins to soften and the butter is melted. In a bowl, whisk the sugar and flour until incorporated. Pour into the apple mixture and stir.

Cook the apples on medium heat for about 2-3 minutes or until the mixture has thickened. Allow to completely cool.

Preheat oven to 375 Degrees. In a bowl, whisk together flour, brown sugar, baking soda, and salt. Toss in butter cubes, and flatten with fingers until pea-sized clumps of butter form. Pour in oats and combine with your hands, clumping the oats into the butter.

Pour mixture out onto a parchment-lined baking sheet and chill in the freezer for 15 minutes. Bake for 20 minutes, tossing the mixture once halfway. Use immediately or store in an airtight container for up to a week.

Preheat the oven to 375 degrees and place a baking sheet on middle rack. In a bowl, combine flour, sugar, and salt. Toss chilled butter cubes into the flour to coat and flatten with fingers. One tablespoon at a time, add the ice water until the dough has just come together.

Flatten dough and wrap tightly in plastic wrap. Chill in the refrigerator for at least an hour Allow the dough to warm up on the counter for about 15 minutes before rolling out. Roll out dough and place it in a 9in pie dish. Place the crust in the freezer for about 15 minutes.

Take a fork and poke all along the bottom and sides of the pie crust. Crumple a piece of parchment paper, uncrumple and line the pie shell. Fill the pie shell with uncooked beans up to the very rim. Bake the crust at 375 for 20 minutes.

After 20 minutes, Carefully lift the parchment and beans out of the pie and place them in a bowl to cool. Bake the pie crust for an additional 15 minutes, until the inside is golden brown. Poke any pieces that start to puff down with a fork. Allow the shell to cool until it is safe to handle, but still warm.

Once the pie crust has cooled, fill with apple pie filling and top with crumble. Serve immediately.
